Mac & Cheese #1 :: Chef Mark Cleveland @ Hungry Harvest ::

We’re excited to incorporate Hungry Harvest recipe survey results in our creations.  Turns out Mac & Cheese w/ Harvest vegetables is quite desired.  Here’s our first one.  It’s very easy.  Done in the time it takes to cook the pasta.

Set a pot of pasta water on to boil while you prep the vegetables.  Saute the onion in the oil w/ salt & pepper over high heat until golden brown, about 3 mins.

Or broth, brewed tea or water










Add in the sliced garlic and toss for a minute, just to bloom the fragrance, then add the sherry.  Cook until the sherry is reduced, about 2 mins.  Meanwhile prepare the tomato salsa

SIMPLE TOMATO SALSA

To taste

Combine the diced tomatoes w/ lemon & tangerine juice, minced garlic & salt & pepper to taste.

Organic heavy cream

Favorite Harvest vegetables
1 cup each celery, red pepper, green beans


Add in the soup, cream & your favorite Harvest vegetables to the sauted onion mix and simmer over med high heat until the veggies are cooked to your liking, 8 to 12 mins.

Cook the pasta.  I add the spent lemon & tangerine rinds to the water and a generous bit of sea salt.  They say that the pasta water should taste like the sea.

Or corn starch, tapioca, arrowroot, opt


When the vegetables are tender, add the optional starch to the cheese (I do it right in the bag) and shake to combine.  Add the cheese to the sauce reduce heat to medium low and stir to melt.

Salt & pepper to taste








Add any optional flavorings like mustard, herbs, chili, spices.  Add more salt & pepper to taste.  Combine the drained pasta w/ the sauce & serve with the tomato salsa along side as a garnish. 


If you want to get fancy, top mac & cheese w/ bread crumbs, dots of butter & more cheese.  Put it under the broiler for 3 to 5 mins.  If you have any left over, try a mac & cheese option for breakfast!
