Twice Baked BBQ Salmon Yams

450 Oven or Open BBQ Grill
2 Yams (4 halves) in two BBQ Grilling Bags

2 Medium Yams, pre baked
1/2 Cup Cream Cheese, diced, room temp
1/2 Cup Salmon, cooked, smoked, canned
1/2 Cup Scallions, sliced
1-2 Tsp Rosemary Garlic Sprinkle, Everson Spices

Citrus & Fresh Herbs for garnish

Cut the baked yams in half length wise & scoop the center flesh into a mixing bowl.  Leave a quarter inch of the yam intact along the skin to create a firm boat.  Stir the cooked or smoked salmon into the yam along w/ the diced cream cheese, scallion & rosemary garlic sprinkle.  Load the stuffing mix into the yams & use a fork to press firmly and make a decorative pattern on the top.  Load two halves into each bag (on top of the parchment) & seal the bags for sale. 

REHEATING INSTRUCTIONS: BBQ on an open grill foil side down, or roast in a 450 oven for 20 to 25 mins.  Let rest for 2 mins before opening the bag.  Garnish w/ fresh citrus & herbs.  Follow all instructions printed on the Ready.Chef.GO! BBQ bag.

POINT OF SALE DISPLAY:  Display these beautiful stuffed yam bags w/ everything to showcase them as both side dish & main course.  Stock the display w/ the salmon used in the yams, for example, fresh, deli, smoked & canned salmon options.  Add more bags of BBQ fare like our dogs and corn in bags.  Add all the fixings, potato, 3 bean & macaroni salads, fresh fruit salads, spice blends, yam fries & chips, lots of BBQ beverages, sparkling flavored water, beer, etc.  Add relevant condiments like bread & butter pickles, relish, etc.  Everything sweet and sour goes well on this display.
