It's amazing how much slaw you get from small tight head of red cabbage.  And foodies love the opportunity to practice and hone their knife skills creating an even fine hand cut shred.

Half moon slices

Favorite fruit preserves

Apple cider vinegar
Or balsamic or wine vinegar

Sea salt

Fresh minced ginger

Shredded kale

Toss everything together in a large bowl.   


Allow to sit at room temp for 2 hours, stirring a few times to start the maceration.  Serve as a salad, or sautĂ© for a great crunchy hot vegetable dish.

Grate apples from top to bottom.  It works better and faster that way.
