Granola Baked Apples :: Chef Mark Cleveland @ Ready.Chef.GO! ::
































 

3 Mins Microwave High Power
Two to four servings

2 Medium Apples (I used organic pink lady)
1/3+ Cup Favorite Granola (I used honey multi grain)
1/4+ Cup Favorite Dried Fruit (I used golden raisins)
1/4+ Cup Favorite Nuts or Seeds (I used pepitas)
1/4+ Cup Sweetened condensed coconut milk
1 Small Citrus, juice & zest (I used Meyer lemon)

Shaved chocolate for garnish

Cut and core apples.  A melon baller works great to remove just the center core.  Arrange the 4 halves in a small baking dish & sprinkle with citrus zest.  Top lightly w/ nuts or seeds & dried fruit.  You can either top the apples as I did, or add more of the flavor toppings & create an apple crisp if you’d like.  Add granola, then more seeds & fruit, drizzle w/ condensed milk & squeeze the citrus juice over top.  Place the dish into a Ready.Chef.GO! bag and microwave on high for 3 mins.  Let cool in bag for about 30 seconds to reduce steam.  Served garnished w/ shaved chocolate if desired.  These are also great w/ sorbet, ice creams of all kinds and whipped coconut milk or cream.

Quinoa Granola Crisp :: Chef Mark Cleveland @ Hungry Harvest ::


Difficulty: Easy
Time: 15 mins prep, 35 mins bake
Servings: 6 to 8 servings

For thems that love to cook, the smell of a sweet crisp baking wakens the spirit.  For Hungry Harvesters new to the joys of culinary creations, expect a revelation.  Keep some add on granola in your pantry for when the fruits demand attention.  This hearty no fuss crisp is made and baked in a 10 inch cast iron skillet.  Serve hot with your favorite ice cream.

Or AP or whole wheat

Optional

Set the oven to 350.  Melt the butter in a 10 inch cast iron skillet or oven proof baking dish.  Add in the granola, 1 T brown sugar (I used date molasses), 1 T quinoa flour or AP flour and warm to combine.   


Put the granola mix in a small bowl and mix in the vanilla if using.  Set aside.  In the same skillet add

Simmer over medium high heat, until the apples are tender, about 5 to 7 mins.  I don’t peel my organic apples.  Add

Black plums

Or AP or whole wheat


Stir over heat, then add

Whole or cut in half


Stir well, then top w/ the granola mix.  Bake for 30 to 35 mins & serve w/ a nice scoop of your favorite ice cream or sorbet.


I’m a low sugar chef, so bump up the sweetness a lil if your family has a sweet tooth.  But also, trust me, as you get used to lowering the sugar incrementally, you’ll find that the taste of the fruit comes through more.  And remember, you’ve got ice cream to sweeten the dish too.

Hungry Parfait :: Chef Mark Cleveland @ Hungry Harvest ::

Good for breakfast, dessert, picnics & snacks.  Not too sweet, high in vitamins and fruit fiber and fun for the whole family to make and eat.  This is a great dish to get kids involved in culinary activities.  This recipe makes 2 generous parfaits

Favorite yogurt

Organic sweetened condensed milk
Or sweetened condensed coconut milk


Optional Garnishes:
Chia seed
Hemp seed
Fresh mint
Fresh sweet herbs
Citrus zest
Raisins
Currants
Dried berries
Trail mix
Nuts
Etc



Minimal prep includes dicing the apples, quartering the strawberries and cutting the grapes in half.   


Supreme the orange if you wish, or cut into wedges or juice and zest.  Set everything out and let family and folks build their own Hungry Parfait. 

I start w/ yogurt on the bottom.  I use two 6 oz containers for varied flavor.  Today we used blueberry and vanilla bean.  You can choose non dairy or lactose free yogurts as well.  I like to make sure the yogurt makes contact w/ the granola to soften it up a bit. 


Layer in fresh fruit, mint, any optional garnishes and use a spoon to compress the parfait.  Layer in the sweetened condensed milk if using.  And put a dollop on the very top as well.  Festive and gorgeous, the fresh fruit and tangy yogurt flavors tantalize the tongue.


This parfait is great right away, or build them in mason jars and chill overnight to take to work or picnics.
