Easy Ganoosh :: Chef Mark @ Hungry Harvest ::

When you find fresh ripe eggplant in your box, it's time for Baba Ganoosh.  Our Hungry Harvest version is quick and easy to make w/ ingredients you have on hand.  Plus we introduce a few new ingredients for y'all to investigate and perhaps add to your pantry.

Prick all over w/ a fork and roast in a 425 oven on a parchment or foil lined baking sheet for 30 45 mins until very soft.  When cool to the touch, slice open and scoop the flesh into a bowl w/ a spoon.   

 Here's what the eggplant looks like roasted just right.  We roasted a butterkin & acorn squash in the same 425 oven for another recipe this week, Roasted Winter Squash w/ Kale from the Hungry Harvest box.  The squashes take a bit longer to roast through
You’ll should have about 2 cups of pulp.  Add:

Stir well.  You can use any of these optional flavors as well, stir them in, or sprinkle on the top for garnish.

Scoop onto a plate and drizzle w/

Then top w/ more sesame seeds AND any optional garnishes.  Serve w/ cucumber and any favorite veggie slices as well as flat breads and crackers.  This also makes a great stuffing for a classic baked potato!

Citrus Shoyu Butter

Melt butter w/ all the other ingredients in a small sauce pan over low heat.  Allow to cool to room temp.  Stir well to emulsify.  Pack into a clean glass jar and refrigerate.  This butter is fantastic with all citrus fruits, Meyer lemon, tangerine and grapefruit are particularly delish.  But the more readily available lemons, limes, oranges etc all make Citrus Shoyu Butters with distinctly delightful flavor profiles.  Double the rest of the ingredients if using a whole juicy grapefruit or pomelo.  Substitute coconut oil or a mix of coconut oil and evoo for a non dairy version.  Use the finest quality shoyu you can find.  If you prefer to go gluten free choose tamari.  You'll find a lot of useful info about choosing quality Soy Sauce here.
This eggs anytime meal is resplendent w/ Meyer Lemon Shoyu Butter.  Creamy from the butter, tart from the citrus and loaded w/ shoyu umami.  Wilted organic romaine, coconut & corn tofu, pineapple sage blossoms.  And it all came together in less that 15 mins.
You'll add flavor quick as can be to any dish that starts w/ vegetables.  Sprouted garbanzos and romesco cauliflower, simmered in the garbanzo bean broth and garnished with a teaspoon of Meyer Lemon Shoyu Butter.  That's all it takes for a scumptious dish.

Avanti Simple Seed Blend :: Fantastic Flavor Fast

Organic tofu tacos w/ basil blossoms & Avanti Simple Seed Blend

Spend a few quick moments combining a bunch of crunchy, flavorful and nutritious seeds & spices in a jar and save yourself a ton of time whenever you cook or garnish a dish.  No recipe required.  When you hear of particular relevanthealth benefits on Dr Oz or Dr Fuhrman et al on PBS add them to your mix.  Some of my favorite and essential seeds include:
Get started w/ seeds in a jar
SOME SEEDS

Fennel & anise (love that licorice flavor)

Cumin
Caraway
Pepitas

All seeds and spices have a wide variety of micronutrients and thus health benefits.  Google spices by name or health concerns such as “herbs and spices for blood pressure, cardiovascular health, diabetes, arthritis, etc.”  

Combine your favorite spices into a clean and dry glass jar w/ a tight fitting lid.  I make mine in small batches, a pint jar is great.  Keeps things fresh.  Don’t fill it too full.  You’ll want room to shake it like Taylor. 

I like to keep one in the kitchen and one more tableside.  Make a separate one with warm sweet spices like Avanti Hawaij, pumpkin spice, cinnamon, cloves, cardamom & sweeter herbs like mint & lemon balm, etc. for your morning oats & hot organic grain cereals.  Mix in some dried cranberries, raisins, tree nuts and you’ll make a nutritious complexly flavored breakfast in minutes.
 
Hot fatalii chili yam cakes w/ mushroom stew & romaine salad, topped w/ pickled onions & seeds
This is a great alternative to adding cheese, oil or sour cream as a garnish for soups, stews, salads and entrees.  The seeds offer that satisfying crunch, satiating healthy fats & pixel points of flavor.  Mash into an avocado on toasted ancient grain bread for a power breakfast or high-energy snack.
