Whole Fruit Marmalade :: Oh So British Baking ::








BASICS

For the weight of the cooked fruit use
70% Organic Cane Sugar
10% Honey
10% Port Wine or Sweet Marsala
I round up

This recipe uses whole citrus fruits boiled for several hours.  It’s definitely got that bitterness that the British (and I love).  I’ve cut back on the sugar, so this is even more flexible for use in savory applications.  Try it w/ mango on focaccia.  If you use grapefruits as I did, you’ll find the bitterness increased.  For a more mild version start w/ mostly oranges and tangerines.  Blood oranges add a gorgeous color.  Add in a few lemons and limes regardless.  They add so much flavor complexity.  Meyer lemons and Bearss limes are great.  Start with about 4 to 5 pounds of washed whole citrus fruits.  Put into a large pot w/ enough water to cover.  Put a lid on the pan and bring to a boil.  Reduce heat to simmer and simmer covered for 2 hours.  Turn off heat and cool over night in the covered pot.  Strain and save liquid

Directions:

The original recipe has you warm the sugar in a low oven at 200 F for 30 while you prep the fruit. Heat the liquid, honey & port while the sugar is warming.  Use the widest large pot you have.  Cut the fruit into dice or strips.  You can pulse in batches in the food processor for a finer preserve.  I like bigger strips.  Add the chopped fruit and the warm sugar and bring the heat to high.  Stir frequently & skim until the mixture comes to 105 degrees Celsius on an instant read thermometer.  Cool, then pack into sterilized glass jars & refrigerate.  You can can it if desired, but it keeps for months in the fridge.  The texture is divine & the color a rich rosy amber.

Breakfast Chicken & Waffles

Microwave high for 1 1/2 mins or 425 oven or 15 to 20 mins
1 serving per dual compartment bag

1 Waffle
5 Chicken Nuggets, fully cooked, browned if necessary
2-3 Tbs Maple Syrup
2 Tsp Butter OR 1 Tbs Maple Butter (Recipe Below)
2-3 Fresh Citrus Slices
1/3 Cup Trail Mix (I used M&M trail mix for color & kid appeal)

More Trail Mix for garnish

Into one side of the dual compartment bag load in the waffle topped w/ the browned & fully cooked chicken.  Top w/ trail mix.  To the other compartment add the maple syrup, butter or compound maple butter (recipe below).  I used a 1 Tbs ice cream scoop for the compound butter for a pleasing shape. 

REHEATING INSTRUCTIONS: Microwave on high for 1 1/2 mins or heat in a 425 oven for 15 to 20 mins.  Let rest for 30 seconds before opening the bag.  Serve garnished w/ more M&M trail mix

NOTE:  Ready.Chef.GO! bags allow for excellent texture in the microwave & fast high heat cooking in the oven.  The results are always succulent & tender.  You’ll taste the difference.  This can be made w/ frozen chicken nuggets, pre cooked fried chicken pieces or even meatless chicken products.   Just make sure they are fully cooked and browned.  The choice of waffles are endless.  Use frozen for ease.  Depending on your client market choose whole grain, gluten free, blueberry, organic, etc.  Quick to put together using prepared items.  Looks great, long shelf life.  If using plain pats of butter, use a gourmet brand & talk up flavor & healthful properties of organic & grass fed. 

POINT OF SALE DISPLAY:  Display w/ more packed or bulk sales trail mix, fresh citrus, fresh juices & everything related to breakfast including coffee & tea.  If using the compound butter, add the ingredients and recipe so folks can make more at home.  Sell it as a ‘whole family project’.  Add organic & grass fed butter, citrus, maple syrup, flavored sea salts, spices, gourmet black pepper, etc. 

Chef Mark’s Maple Citrus Compound Butter Recipe
1/2 Pound Butter, unsalted organic or farm raised
1/3 Cup Maple Syrup
1/2 Tsp Salt (I love citrus infused sea salt or pink salt for this)
1/4 Tsp Black Pepper
1/4 Tsp Pumpkin Pie Spice
1 Tsp Orange Zest
1/4 Cup Orange Juice
1 Tbs Honey

Melt over med heat until bubbles are large, 2 or 3 mins.  Refrigerate, then scoop into 1 Tbs sized shapes & freeze or use parchment paper to form into a log & freeze.  Slice for use.

Black Pepper Scallops w/ Corn & Peas :: Chef Mark Cleveland @ Ready.Chef.Go! ::





























Microwave power level 8 for 6 mins or 400 oven for 20 to 25 mins
Serves 2 per bag

6 Ounces Scallops
3/4 Cup Corn Kernels
1/2 Cup Peas
2 Cups Grain Medley, pre cooked
1/3 Cup Italian Dressing
1 Tbs EVOO
Salt & Pepper

Citrus & Fresh Herbs for garnish

Coat the scallops lightly in EVOO & sprinkle the top w/ black pepper.  Set aside.  Add the remaining EVOO to the rest of the ingredients and stir well.  Spread the corn & grain mix in the bag.  Top w/ the black pepper scallops.  Seal the bags. 

REHEATING INSTRUCTIONS:  Microwave at powder level 8 for 6 mins or heat in a 400 oven for 20 to 25 mins, until the grains are hot & the scallops are just cooked through.  Let rest for 5 mins before opening the bag.  Serve garnished w/ citrus wedges.  The lower power level in the microwave makes for perfectly cooked seafood.

POINT OF SALE DISPLAY:  Build your display with fresh citrus & herbs & a sign saying, “Garnish your Scallops w/ a Squeeze of Fresh Citrus & Herbs”  Add crusty breads, vegetable side dishes, seafood spice blends like Old Bay, etc., desserts, especially sorbets, citrus pound cakes & cookies, lettuce & tortillas for wraps, beer, sparkling wine & crisp white wines, Italian citrus sodas, etc.  If selling the grain medley, add to the display.

Juice the citrus for another recipe such as this week’s Fruit Flash Pickle, or freeze the juice in ice cube trays.  Use the spent rinds to make a batch of Citrus Cleaner.
