Whole Fruit Marmalade :: Oh So British Baking ::








BASICS

For the weight of the cooked fruit use
70% Organic Cane Sugar
10% Honey
10% Port Wine or Sweet Marsala
I round up

This recipe uses whole citrus fruits boiled for several hours.  It’s definitely got that bitterness that the British (and I love).  I’ve cut back on the sugar, so this is even more flexible for use in savory applications.  Try it w/ mango on focaccia.  If you use grapefruits as I did, you’ll find the bitterness increased.  For a more mild version start w/ mostly oranges and tangerines.  Blood oranges add a gorgeous color.  Add in a few lemons and limes regardless.  They add so much flavor complexity.  Meyer lemons and Bearss limes are great.  Start with about 4 to 5 pounds of washed whole citrus fruits.  Put into a large pot w/ enough water to cover.  Put a lid on the pan and bring to a boil.  Reduce heat to simmer and simmer covered for 2 hours.  Turn off heat and cool over night in the covered pot.  Strain and save liquid

Directions:

The original recipe has you warm the sugar in a low oven at 200 F for 30 while you prep the fruit. Heat the liquid, honey & port while the sugar is warming.  Use the widest large pot you have.  Cut the fruit into dice or strips.  You can pulse in batches in the food processor for a finer preserve.  I like bigger strips.  Add the chopped fruit and the warm sugar and bring the heat to high.  Stir frequently & skim until the mixture comes to 105 degrees Celsius on an instant read thermometer.  Cool, then pack into sterilized glass jars & refrigerate.  You can can it if desired, but it keeps for months in the fridge.  The texture is divine & the color a rich rosy amber.

Harvest Hack: Avocado Chocolate Truffles :: Chef Mark Cleveland @ Hungry Harvest ::






 

Many people don’t know about this great Avo hack.  Fun family project w/ kids, scrumptious, nutritious & craveable. 







If you’re learning to love the taste and texture of avocados this is a great preparation to try.  If you’d like to mask the taste of the avocado completely, add in 1 Tbs coconut oil to the chocolate chip mix.  I used  63% dark chocolate chips.  Semi sweet chips make for a sweeter truffle.

 Family Affair – Let’s Make Holiday No-Bake Cookies w/ the Kiddies!

With any luck your five-year-old is already an avid label reader, prowling supermarket aisles and quickly returning packages of kiddy treats containing hydrogenated trans fats and high fructose corn syrup to the shelf with a hearty toddler sized ‘humph’ of righteous indignation.  Still, if your little nipper is not yet quite so savvy, here’s a great opportunity for a family project to indulge creativity and exercise dexterity while enhancing their nutritional knowledge. 

You’ll use a stovetop or micro to melt and heat, but with no sharp objects or blasting ovens to temp your little Hantzels and Gretels, those good-time-ending cuts and burns are a non-issue this holiday season.  Kids particularly will enjoy the culinary irony of using chow mein noodles in sweet treats.  So wipe off the table, set out the ingredients, prepare some cute boxes or tins to showcase your family handiwork and rock the season with a holiday healthful homemade cookie bonanza!

Candy Bar Cookies

1         cup         almond butter        
1         cup         brown rice syrup        
3/4         cup         brown sugar        
1/2         cup         currants        
1/2         teaspoon         vanilla        
6         cups         corn flake cereal        
1         cup         semisweet chocolate chips        
2/3         cup         pine nuts        

In a large saucepan combine almond butter, brown rice syrup & brown sugar.  Cook over medium heat until smooth.  Stir in currants and vanilla.  Then stir in corn flakes chips and pine nuts.  Stir until well mixed and evenly coated.  Press into a lightly greased 9 x 13 baking dish.  Cool, then cut into bars.

Per serving (excluding unknown items): 274 Calories; 14g Fat (43% calories from fat); 4g Protein; 39g Carbohydrate; 0mg Cholesterol; 8mg Sodium



Chow Mein Clusters

1         cup         butterscotch chips        
1         cup         white chocolate chips        
1         teaspoon         China 5   Chinese 5 Spice Powder        
2         cups         chow mein noodles        
1         cup         cashew pieces        

Melt chips w/ China 5 in double boiler over simmering water or in the micro on low stirring after each minute until smooth.  Stir in noodles and cashews.  Drop by teaspoon onto parchment paper.  Chill until firm.

Notes:         Use all butterscotch or all white chocolate for flavorful variations.

Arctic Snowballs

1         cup         organic butter        
4         tablespoons         rice dream®        
1         teaspoon         cardamom        
1 1/2         cups         brown sugar        
1/3         cup         cocoa powder        
4         cups         oatmeal        
1         cup         coconut flakes        
1         cup         macadamia nuts         crushed

Cream butter with rice dream and cardamon.  Add sugar, cocoa, oatmeal and mix well.  Roll into one inch balls.  Add more rice dream if necessary to create the proper texture.  Roll half the balls in coconut flakes, and the other half in the crushed macadamias. 

Per serving: 194 Calories; 11g Fat (47% calories from fat); 3g Protein; 24g Carbohydrate; 20mg Cholesterol; 220mg Sodium

Vegan Chocolate No Bake Cookies

3/4         cup         maple sugar        
3         tablespoons         unsweetened cocoa powder        
1/3         cup         soy milk        
1/2         cup         soy nut butter        
1 1/4         cups         rolled oats        
1         tablespoon         vanilla extract        

Line a baking sheet w/ parchment.  Combine maple sugar and cocoa in a medium saucepan.  Stir in soy milk and soy nut butter.  Bring to a boil over medium heat, stirring constantly.  This part is hot, so be very careful.  Stir in oats and vanilla, remove from heat and stir until well blended.  Drop by spoonfuls onto parchment.  Chill until firm.

Per serving: 59 Calories; 1g Fat (16% calories from fat); 2g Protein; 11g Carbohydrate; 0mg Cholesterol; 2mg Sodium
