Golden Peach Matzo Brei :: Chef Mark Cleveland @ Hungry Harvest ::

Peaches release their full flavor when just slightly warmed in this sweet version of the classic Ashkenazi comfort food Matzo Brei.  Have it for brunch or dessert.  You can find Matzo everywhere.  They come whole wheat & organic too.  We flavored our blackberry compote w/ the flavors of date molasses & orange blossom water from Alwadi-alakhdar.

Black berries


Ribbon zest one grapefruit.  Microplane zest the other.  Then summon the courage to supreme one of them.   



Reserve the supremes to garnish the finished Matzo Brei.  You can find many how to supreme videos online.   


Make the compote.  Combine blackberries, honey or molasses, ribbon zest, juice from one grapefruit & rose or orange water.  Stir to combine.  Chill.  


 Prep out all the fruits.

Heat the coconut oil or butter over medium heat w/ the grated carrots & salt.  When the carrots wilt, about 2 or 3 mins, add in the apples and sauté until tender.

Meanwhile, break the matzo into large chunks, place into a colander in a large bowl & cover w/ hottest tap water for 30 seconds.  Drain & combine w/ eggs, vanilla and brown sugar.  Using coconut oil results in a flavorful dairy free dish.

Stir into the apple mixture & fry over medium heat until golden on the bottom, about 4 mins.   




Use a spatula to turn over in large chunks.   




Sprinkle the peaches & fine grapefruit zest on top and cook until the bottom is golden, about 3 or 4 more mins.   




Transfer to a serving plate, add grapefruit supremes, mint & serve w/ black berry compote.  Serve w/ yogurt, sour cream, crème fraiche or ice cream if you’d like.

Roasted Apples & Pears :: Chef Mark Cleveland @ Hungry Harvest ::

So delicious, so fast and easy.  This elegant dessert requires nothing you don’t already have at home.  Open your Hungry Harvest box, fire up the oven & create!

Set the oven to 550.  I used one Gala, one Fuji, one Bosc & one Bartlett pear this time.  Cut the apples & pears in half and use a melon baller to remove the core.

Sucanat
Or brown sugar, organic cane sugar

Tablespoons
Organic unsalted butter
Or coconut oil

Juice and zest



Sprinkle the cut sides w/ sugar & cinnamon.  I used a mix of sucanat, brown sugar & organic cane sugar mixed w/ the cinnamon.   


Dot each core w/ a knob of unsalted butter & turn cut side down. Zest the lime, set the zest aside & put the lime cut side down on the pizza pan with the fruit.

Or red grapejuice



Add the port wine or red grape juice.   


Put into the oven & set a timer for 15 mins.  Get the ice cream out of the freezer to soften. 



When the timer goes off, remove the pan from the oven, and turn the fruits over into a serving dish.  Spoon over the sauce from the pan, squeeze the lime over the fruit and top w/ the zest.

Plate with the ice cream, blackberries (I cut some in half, leave some whole) and drizzle w/ the date molasses if using.  Try the flavors of Alwadialakhdar. 




You’ll look forward to getting whole fruit in your Hungry Harvest box from now on.  This amazing dessert is relatively low fat and sugar, so full of citrus flavored fresh fruit.  The cinnamon sings.  The cool berries, cold ice cream & hot fruit are fantastic.  I don’t peel the organic fruit, but do so if you’d like.
