Harvest Taco Trio Mio :: Chef Mark Cleveland @ Hungry Harvest ::

You can make tacos every which way and loose from your Hungry Harvest Box.  We did three very different versions today.  One traditional, one Asian fusion in lettuce & seaweed wraps & a hearty flatbread version the kids will love.

BASIC TACO FARE
Ingredient

Let’s start w/ a trad taco.  I used corn tortillas grilled over an open flame to crisp them up.  Then I added one of my pint salads making sure not to soggy it up w/ too much dressing, next simple white beans, chili flakes & Harvest radish & mango. HARVEST HACKS:> If you’re trying to learn to like a new fruit or vegetable, just add a slice or two of each, as I did w/ the radish & mango. 








TACO WRAPPERS
Ingredient
Corn or flour tortillas
Romaine or butter lettuce leaves
Pita or favorite flatbreads














Asian fusion tacos are all veg.  On top of Harvest romaine leaves I layered on nori seaweed, then red kale & orange peppers marinated in a fresh squeeze of Harvest lemon juice, sesame seeds, soy sauce & toasted sesame oil.  Served w/ roasted chicken, fish or meatless meat as you wish.  Crisp & tasty!

Proteins (sausage, chicken, fish & seafood, meats, carnitas, meatless meats, etc.)

Scallions or raw sliced onion











Flatbread tacos are good for the whole family & make a filling dinner meal.  I topped a flatbread w/ tomato slices, Mexi cheese blend, then Sriracha Cashew Broccoli from last week’s Harvest recipes.  Put it on a pizza pan in a 400 oven for about 7 mins, just to melt the cheese.  Arrange on a plate & garnish w/ yogurt, pepitas, beans & chopped fresh tomatoes (the end bits from my slices).  Fold up taco style.


Everything tastes good in tacos.  And almost all tacos are mostly veggies.  So this is a terrific platform for expanding our veggie preferences.  I like a mixture of cooked & raw veggies, hot and cold garnishes.

Avanti Simple Seed Blend :: Fantastic Flavor Fast

Organic tofu tacos w/ basil blossoms & Avanti Simple Seed Blend

Spend a few quick moments combining a bunch of crunchy, flavorful and nutritious seeds & spices in a jar and save yourself a ton of time whenever you cook or garnish a dish.  No recipe required.  When you hear of particular relevanthealth benefits on Dr Oz or Dr Fuhrman et al on PBS add them to your mix.  Some of my favorite and essential seeds include:
Get started w/ seeds in a jar
SOME SEEDS
Sesame, both black and brown
Mustard, yellow, brown & black
Hemp
Fennel & anise (love that licorice flavor)

Coriander
Cumin
Caraway
Pepitas

EXTRAS
Puffed brown rice (The toasted puffed brown rice used in genmai tea is available separately [without the green tea] in Japanese grocery stores)
 
Avanti ancient grain prantha stuffed w/ cabbage & onion & served w/ red & green vegetable stews  
All seeds and spices have a wide variety of micronutrients and thus health benefits.  Google spices by name or health concerns such as “herbs and spices for blood pressure, cardiovascular health, diabetes, arthritis, etc.”  

Combine your favorite spices into a clean and dry glass jar w/ a tight fitting lid.  I make mine in small batches, a pint jar is great.  Keeps things fresh.  Don’t fill it too full.  You’ll want room to shake it like Taylor. 

I like to keep one in the kitchen and one more tableside.  Make a separate one with warm sweet spices like Avanti Hawaij, pumpkin spice, cinnamon, cloves, cardamom & sweeter herbs like mint & lemon balm, etc. for your morning oats & hot organic grain cereals.  Mix in some dried cranberries, raisins, tree nuts and you’ll make a nutritious complexly flavored breakfast in minutes.
 
Hot fatalii chili yam cakes w/ mushroom stew & romaine salad, topped w/ pickled onions & seeds
This is a great alternative to adding cheese, oil or sour cream as a garnish for soups, stews, salads and entrees.  The seeds offer that satisfying crunch, satiating healthy fats & pixel points of flavor.  Mash into an avocado on toasted ancient grain bread for a power breakfast or high-energy snack. 

Spice blends and seasonings have been around forever.  But rarely is the main component those healthy seeds we know we should be eating more of.  Make your own at home, and make your time in the kitchen work for you.  Whip up a bunch, they make great Avanti Natural Gifties too! Avanti Dank Teriyaki

Avanti Dank Teriyaki medley on Blood Orange Honey Dijon dressed baby kale
w/ teriyaki tofu, haricot verts, carrots & whole garlic cloves. 

This all natural, dark and rich teriyaki is sweetened w/ dried fruit, 100% fruit juices, honey and molasses.  It's loaded w/ trinity roots, spices and healthy oils.  It keeps well in the fridge and freezes perfectly.  Use it on everything you cook in the kitchen and on the grill.  Brush it on for the last few mins of cooking for a lacquer glaze.  Share your culinary photos of your Avanti Dank Teriyaki plated dishes on our Facebook, Twitter and Instagram pages all at AvantiNatural.

Directions:
Bring to a simmer covered, simmer for 10 mins.  Cool.  In a blender or Vitamix add all the ingredients below.

Blend all of the above until smooth.  Return to the pan and add the following

Put the water in the vitamix and turn it on, to rinse out all the goodness from the jar.  Add that to the pot w/ the pineapple juice.  Bring to a simmer, adding in

Stir to dissolve the sweeteners.  Taste, add a tablespoon more honey if desired. 
All to cool completely.  Store refrigerated.  This is best made several days in advance of your first use.  Allow the flavors to marry for the best tasting Dank Teriyaki
Dank Teriyaki tacos w/ tofu & haricot verts, pickled jalapeños, carrots & garlic
Thin a little teriyaki sauce w/ some sake, vermouth, white wine or apple juice and make roasted teriyaki garlic cloves.  About 30 mins in a 375 oven will do it.  

Here's what they look like heading for the oven, just need to add the sake.  

Give them a quick stir.  Now into that 375 oven for 30 mins.

And they look like this when they are tender, seasoned, dank and done.
