Simple Sausage & Corn :: Chef Mark Cleveland @ Ready!Chef!GO! ::




















 

Printed Directions: 4 mins in microwave on high power or 15 mins in a 400 oven.

Commercial prep per each bag:

2 Sausages, recommend fully cooked sausages of any protein type (including vegan)
2 Whole Ears of Corn, recommend organic for premium appeal
Fresh Citrus Slices
1 Tbs Butter or Coconut Oil
1 Tsp Dry Spices, Chili Powder, Italian, Mexican, Thai Seasoning, etc., Chipotle, Herbs de Provance, Curry Powder, Garam Masala, Etc

Choose fully cooked sausages or hot dogs for longer shelf life.  Poke holes in the sausages w/ a fork

Load 2 sausages & 2 whole ears of corn into Ready. Chef. GO! bags as shown in photo.  Top each ear of corn w/ a citrus slice, pat of butter & sprinkle of spice blends. 

Create a full display surrounding the sausage & corn bags including all condiments (mustard, ketchup, relish, jar salsa, hot sauce, horseradish, pickles, jalapeños, chipotle in adobo, etc.), breads (hot dog buns, baguettes, flat breads, etc.), chilled add ons (cheese spreads, guacamole, diced onions, sliced chilies, fresh salsa, etc), side dishes (potato, pasta, fruit & green salads, cole slaw, etc.), desserts (cookies, cupcakes, pies, sweet breads, etc.)

Create theme events for Cinco de Mayo, Superbowl Sunday, Labor Day, Memorial Day, etc. with tie ins to other marketing plans across the store.

Avanti Simple Seed Blend :: Fantastic Flavor Fast

Spend a few quick moments combining a bunch of crunchy, flavorful and nutritious seeds & spices in a jar and save yourself a ton of time whenever you cook or garnish a dish.  No recipe required.  When you hear of particular relevanthealth benefits on Dr Oz or Dr Fuhrman et al on PBS add them to your mix.  Some of my favorite and essential seeds include:
Get started w/ seeds in a jar

All seeds and spices have a wide variety of micronutrients and thus health benefits.  Google spices by name or health concerns such as “herbs and spices for blood pressure, cardiovascular health, diabetes, arthritis, etc.”  

Combine your favorite spices into a clean and dry glass jar w/ a tight fitting lid.  I make mine in small batches, a pint jar is great.  Keeps things fresh.  Don’t fill it too full.  You’ll want room to shake it like Taylor. 

I like to keep one in the kitchen and one more tableside.  Make a separate one with warm sweet spices like Avanti Hawaij, pumpkin spice, cinnamon, cloves, cardamom & sweeter herbs like mint & lemon balm, etc. for your morning oats & hot organic grain cereals.  Mix in some dried cranberries, raisins, tree nuts and you’ll make a nutritious complexly flavored breakfast in minutes.
 
Hot fatalii chili yam cakes w/ mushroom stew & romaine salad, topped w/ pickled onions & seeds
This is a great alternative to adding cheese, oil or sour cream as a garnish for soups, stews, salads and entrees.  The seeds offer that satisfying crunch, satiating healthy fats & pixel points of flavor.  Mash into an avocado on toasted ancient grain bread for a power breakfast or high-energy snack. 

Spice blends and seasonings have been around forever.  But rarely is the main component those healthy seeds we know we should be eating more of.  Make your own at home, and make your time in the kitchen work for you.  Whip up a bunch, they make great Avanti Natural Gifties too! Flavored Sea Salts :: Add Taste // Reduce Sodium ::


The concept is simple.  To a wee bit of sea and mountain salt, add other flavors in the form of spices, herbs, seeds & zests, then when you need that zing on your taste buds, only a fraction of it will come from salt itself.  Let's not be alarmists.  Most of the sodium we consume comes from processed and fast food.  Very little comes from foods we cook at home.  But low sodium restaurant food can be bland.  Sometimes they don't know how to create flavor w/out sugar, salt and fat.  So pack some punch in your pocket or purse and be ready to take seize the day in a low sodium way.  All of these are designed to be more of a meal topper, for that extra jolt you get from a float of salt, pepper or hot sauce on the surface of your dishes.  But, once you fall in love w/ one or all of them, you'll get ideas.  Pancakes flavored w/ these blends, vegetables saluted w/ nothing more than a bit of evoo or sesame oil and an Avanti Low Sodium Spice Blend will have that crave-ability we desire.

Fine sea salt

 Asafetida is an Indian spice with a bitter bite and so is an acquired taste.  Make the effort, get used to it.  It's worth it.  This one is GREAT in bean and lentil dishes.  As well as with all green veggies.  It makes asparagus sing!  Galangal is a cousin of ginger and turmeric, with a decidedly mustard fragrance.  All are rhizomes.  They add great exotic flavor and are coming into their own as extremely healthful micro nutrients.  Google them!

Toast the hemp seed for 40 mins at 325, stirring once or twice.  Toast the cumin, coriander & Japanese chili for 10 mins at 325.
