Whole Fermented Pickled Garlic Cloves :: Carolina Reaper Infused ::

Whole garlic cloves
2 generous quarts

Soak the cloves in clean fresh water with a good splash of white vinegar for several hours or overnight.  Drain well, shake off all the excess water & spread out in a colander & dry in the sun for an hour or two.  Stir and shake every 15 mins or so.


Into TWO Quart Jars, fill each jar about 60% full with garlic cloves, then load the following into EACH Jar.

Carolina Reaper Chili
Pierced w/ a knife

Pomegranate molasses

Fresh orange juice


Top the flavorings w/ more garlic cloves to the rim.  Line the tops of each jar w/ parchment paper.  Shake the jars twice daily and ferment at room temp in a cool place for one week.  Then refrigerate.

Simple Sausage & Corn :: Chef Mark Cleveland @ Ready!Chef!GO! ::




















 

Printed Directions: 4 mins in microwave on high power or 15 mins in a 400 oven.

Commercial prep per each bag:

2 Sausages, recommend fully cooked sausages of any protein type (including vegan)
2 Whole Ears of Corn, recommend organic for premium appeal
Fresh Citrus Slices
1 Tbs Butter or Coconut Oil
1 Tsp Dry Spices, Chili Powder, Italian, Mexican, Thai Seasoning, etc., Chipotle, Herbs de Provance, Curry Powder, Garam Masala, Etc

Choose fully cooked sausages or hot dogs for longer shelf life.  Poke holes in the sausages w/ a fork

Load 2 sausages & 2 whole ears of corn into Ready. Chef. GO! bags as shown in photo.  Top each ear of corn w/ a citrus slice, pat of butter & sprinkle of spice blends. 

Create a full display surrounding the sausage & corn bags including all condiments (mustard, ketchup, relish, jar salsa, hot sauce, horseradish, pickles, jalapeños, chipotle in adobo, etc.), breads (hot dog buns, baguettes, flat breads, etc.), chilled add ons (cheese spreads, guacamole, diced onions, sliced chilies, fresh salsa, etc), side dishes (potato, pasta, fruit & green salads, cole slaw, etc.), desserts (cookies, cupcakes, pies, sweet breads, etc.)

Create theme events for Cinco de Mayo, Superbowl Sunday, Labor Day, Memorial Day, etc. with tie ins to other marketing plans across the store.

Ataulfo Mango Pineapple Salsa :: Chef Mark Cleveland @ Hungry Harvest ::

We do 95% of this in a high powered blender [a Healthy And Delicious cook’s best friend] & give it color, flavor & crunch by hand dicing the red onion finely.  If y’all like it HOT, this salsa explodes the chili flavor enveloped in fruity umami!

Peel the mangos & cut the flesh from the disk shaped pit.  Here’s a video tutorial from Whole Foods on how to prep a mango.  This works for all the varieties as they all have the same skeleton.  Peel the pineapple, zest the navels & lemons & core the apples.  



OPTIONAL FLAVOR INGREDIENTS

Garlic
Fine dice

Fresh or pickled ginger

Chili peppers

Fresh thyme




Prep out any optional ingredients.  Today, I used 3 cloves of garlic, 1 tablespoon pickled organic ginger, fresh thyme leaves & ONE extremely HOT scorpion chili.  Roughly dice all the fruit & add to the blender w/ the citrus juice & zest, salt & pepper to taste & any optional ingredients.  


Blend to combine.  Add a little water if the mix is too thick.

Finely dice the onions. Put the onions into a large bowl and stir in the salsa mixture to combine.  


Taking the few extra minutes to hand cut the onions makes for a beautiful salsa that has onion crunch in every bite.   



Onions are one of nature’s most power immune boosting foods.  If you’re not a fan yet, don’t put quite as much in.  But vow to learn to LOVE them.  Your body will thank you. 




This makes for the BEST Chicken & Waffles of all time.  Garnished w/ pomegranate molasses & nasturtiums.  It’s also spectacular on simple cream cheese & spinach nachos, perfect on every burrito, taco, enchilada & more.  Try it on a simple roasted yam.  Share how you enlivened your dishes across all Hungry Harvest social media.
