Smoothies In Jars :: Chef Mark Cleveland @ Hungry Harvest ::

Making pureed fruit & vegetable drinks in mason jars is a great way create ready meals on the go for breakfast or to take to work for lunch or a mid afternoon snack to revive your energy for the rest of the day.

Frozen Harvest Fruit & Veggie Cubes

Seeds, spices, nuts, brewed tea, protein powders, coconut water, coconut milk, kefir, yogurt, diary or plant based milks, etc


I build my smoothies right in the jar.  I sort of go by color.  Get the kids involved w/ this too. 


Remember that a bit of citrus in each smoothie creates that craveability we all love.  HARVEST HACKS:> If you have a back up of ripe fruits & veggies blend them up and freeze them in ice cube trays.  Add a few of those to each smoothie for added flavor & nutrition


Add in any healthful ingredients you’ve heard about and want to get more of in your diet.  This is a good place for those things we all see on Dr. Oz.  Today I used turmeric & ginger, dark blue algae, beet powder, hemp seeds & matcha green tea, spread out between three separate smoothies. 


Blend up the smoothies one at a time for a different flavor in each jar.   Add about 3/4 cup of water, brewed tea, coconut water, plant based or dairy milks, etc.  Pour into jar, then use about 1/3 cup water on high speed to rinse out the jar.  Add that to the smoothie.  Chill well & shake when you’re ready to eat.  


You’ll find your own fresh creations more tantalizing & much cheaper than juice bar offerings.  And using blended whole fruits and veggies retains all the nutritional fiber that keeps our gut healthy.  I like high protein versions for breakfast & lighter veggie & fruit juices for afternoons.

Avanti Simple Seed Blend :: Fantastic Flavor Fast

Spend a few quick moments combining a bunch of crunchy, flavorful and nutritious seeds & spices in a jar and save yourself a ton of time whenever you cook or garnish a dish.  No recipe required.  When you hear of particular relevanthealth benefits on Dr Oz or Dr Fuhrman et al on PBS add them to your mix.  Some of my favorite and essential seeds include:
Get started w/ seeds in a jar
SOME SEEDS
Sesame, both black and brown
Mustard, yellow, brown & black

Fennel & anise (love that licorice flavor)

Cumin
Caraway
Pepitas

All seeds and spices have a wide variety of micronutrients and thus health benefits.  Google spices by name or health concerns such as “herbs and spices for blood pressure, cardiovascular health, diabetes, arthritis, etc.”  

Combine your favorite spices into a clean and dry glass jar w/ a tight fitting lid.  I make mine in small batches, a pint jar is great.  Keeps things fresh.  Don’t fill it too full.  You’ll want room to shake it like Taylor. 

I like to keep one in the kitchen and one more tableside.  Make a separate one with warm sweet spices like Avanti Hawaij, pumpkin spice, cinnamon, cloves, cardamom & sweeter herbs like mint & lemon balm, etc. for your morning oats & hot organic grain cereals.  Mix in some dried cranberries, raisins, tree nuts and you’ll make a nutritious complexly flavored breakfast in minutes.

This is a great alternative to adding cheese, oil or sour cream as a garnish for soups, stews, salads and entrees.  The seeds offer that satisfying crunch, satiating healthy fats & pixel points of flavor.  Mash into an avocado on toasted ancient grain bread for a power breakfast or high-energy snack. 

Spice blends and seasonings have been around forever.  But rarely is the main component those healthy seeds we know we should be eating more of.  Make your own at home, and make your time in the kitchen work for you.  Whip up a bunch, they make great Avanti Natural Gifties too! Avanti 2015 Garden Chili Fermented HOT Sauce

The summer of 2015 was a banner year for HOT chili peppers in the Avanti Natural Garden.  What we used to refer to as Veronica’s grandpappy’s Guadalajara chili was identified by a chef bud as the mighty pequin.  If you fancy growing chilies in your garden, make sure to add at least one of these marvels.  They grow to stellar heights, over 6 or 7 feet, produce hundreds of chilies and live for years.  They are a HOT power chili shrub.  The habaneros, cayenne & Tabasco chilies I ordered from Cross Country Nurseries this year all produced w/ abandon.  I fell in love w/ the golden fatalii.  That plant produced at least 40 chilies over the season.  I only order plants indicated ‘prolific’ and some are, and some not so much.  This fatalii delivered big time.

  I have a gigantor 7 foot tall Bangladeshi eggplant that has produced at least 100 flowers, but is completely sterile and 100% fruitless.  But that is a separate story

As we all know, fermented foods are coming into their own scientifically.  Health-Foodies for Centuries have touted the fermented veg as something to eat daily for optimum health.  Finally Science has caught up w/ instinctive human wisdom.  So, get HOT >> Ferment >> Live Long & Perspire ::]

Avanti 2015 Garden Chili Fermented HOT Sauce

Pick through and wash the chilies.  Allow to drain until mostly dry.  
Chilis ready for hot sauce.  Pequins in one batch, a mix in the other
Place all into a sturdy blender and grind until smooth.  Don’t overdo it.  Remember the vinegar, ginger puree & miso are living organisms.

Don’t allow the heat of friction to kill the beneficial probiotics.  Let sit in the blender for several hours or over night.  Blend again.  This will tenderize, the chili pulp skins and seeds for a smoother sauce.  Divide into clean glass jars.  Cover w/ a tea towel and allow to ferment at room temperature for 3 to 5 days.  Shake well twice a day.  Refrigerate.

* A Note On Chilies <::> Smaller chilies are naturally more dense so they will produce a thicker sauce.  If you use larger chilies such as those from the habanero family, add ½ cup or so of hemp or sesame seeds to the blender to thicken the final sauce.  You can add a tablespoon of flax or chia too, but don’t over do those as they make the sauce sticky.  Adding the seeds increases the nutrition, protein and fiber content of the finished sauce.

** A Note On Herbal Broth <::> This is a great place to create the nutritional alchemy you’d like to include in your daily diet.  As you learn about micro nutrients, teas & herbs that respond to the health issues you would personally like to address, add those components to your herbal broth.  I add a mixture of somes of these: Jamaica, rooibos, cinnamon, nopales, reishi, shiitake, maitake, matcha, red pine bark, cacao, turmeric, ginger, fenugreek, coriander, galangal and more.  I peruse the spice rack and choose for flavor, color & health benefits.  Then I add garden herbs such as basil, lemon grass, oregano, mint, lemon balm, pineapple sage, lemon verbena, rosemary, etc. as the whim strikes me.

This summer I made three variations of this sauce

Variation #1 :: 100% pequin chilies

Variation #2 :: Garden chili mix:  Fatalii, Australian lantern, dagger pod, aji dulce, Tabasco.  I added a ¼ cup hemp seeds to the mix.  It’s a bit thin.

Variation #3 :: 2 parts pequin to 1 part garden chili mix
 
Three variations in jars.  All 3 are HOT Stuff!
