Fennel Sake Broccoli & Carrots :: Chef Mark Cleveland @ Hungry Harvest ::




Master the roll cut.  It's easy and fun and with a hard long vegetable like carrots or parsnips it creates a great texture when cooked.  The thin edges are soft and the thick deep center remains al dente.


In a large skillet or wok combine

Simmer over med high heat to melt coconut oil and golden up the garlic.   
Then add

Trimed into florets

Scrubbed, roll cut

Fennel seed


Stir to combine, set heat to high, cover and cook until tender.  
Remember to peel the stems and slice them up.  Broccoli stems are super crunchy and delish.

Citrus Shoyu Butter

Melt butter w/ all the other ingredients in a small sauce pan over low heat.  Allow to cool to room temp.  Stir well to emulsify.  Pack into a clean glass jar and refrigerate.  This butter is fantastic with all citrus fruits, Meyer lemon, tangerine and grapefruit are particularly delish.  But the more readily available lemons, limes, oranges etc all make Citrus Shoyu Butters with distinctly delightful flavor profiles.  Double the rest of the ingredients if using a whole juicy grapefruit or pomelo.  Substitute coconut oil or a mix of coconut oil and evoo for a non dairy version.  Use the finest quality shoyu you can find.  If you prefer to go gluten free choose tamari.  You'll find a lot of useful info about choosing quality Soy Sauce here.
This eggs anytime meal is resplendent w/ Meyer Lemon Shoyu Butter.  Creamy from the butter, tart from the citrus and loaded w/ shoyu umami.  Wilted organic romaine, coconut & corn tofu, pineapple sage blossoms.  And it all came together in less that 15 mins.
You'll add flavor quick as can be to any dish that starts w/ vegetables.  Sprouted garbanzos and romesco cauliflower, simmered in the garbanzo bean broth and garnished with a teaspoon of Meyer Lemon Shoyu Butter.  That's all it takes for a scumptious dish.

Blueberry Quinoa & Oat Maple Oven Cake





This hearty, wholesome, tasty & healthful ancient grain cake is easy to make fully organic and gluten free (look for gluten free oats).  It's also dairy free and includes the healthy fats from the oats, quinoa, pepitas and coconut oil.  Always choose organic berries.  They are so tasty & filled w/ natural anti oxidant nutrition.

Coconut oil



Set the oven to 375.  Combine all in an 8” oven proof skillet.  I like the ceramic non stick.  Set the timer for 10 mins.  Stir once the coconut oil is melted.  Set the timer for 10 more mins.  When the grains are fragrant and golden brown, remove from oven.  Reduce the oven heat to 325.  Set the pan over medium flame and add:

Or water

Port wine
Or fruit juice

Simmer until liquid is absorbed.  About 10 to 15 mins.  Reduce heat to low and add:

Tangerine zest

Fresh tangerine juice

Maple syrup


Simmer for about 5 mins until the liquid is absorbed and the grains nice and plump.  Stir to cool until cool enough to touch.


Meanwhile in a medium bowl whisk:

Fold in the maple grain mix, then gently fold in:

Wipe out the skillet, spray it with organic oil spray, or wipe it w/ coconut oil.  Put the cake into the 325 oven and bake for 45 to 50 mins until the center is nicely set.  Rotate the pan halfway through.  Let cool for about 5 mins, shake the pan gently to loosen then slide out on to a plate to fully cool.


Serve w/ more organic blueberries, organic Bulgarian or Greek yogurt & mint or Aztec sweet herb garnish.  

Serve warm, cold or room temperature!
