Fatalii Butter :: Home grown African habanero gets buttered up

Fresh picked fatalii chiles w/ heatless habaneros & wee pequins
This is a deliciously HOT butter of the perfect texture and flavor.  Add as few or as many habanero chilies as y’all enjoy.  I like mine devilishly HOT!!  You will use a full pound of organic butter for this recipe, divided use.  We tone the texture & add more flavor by combining organic dairy butter w/ organic coconut oil and coconut milk as well as evoo.  This butter holds a fine texture when chilled and melts readily onto warm foods.  It sautés well, doesn’t burn or brown too rapidly and imparts it’s flavorful heat into whatever you pair it with.

I developed this recipe to showcase the flavor of the very prolific fatalii chili growing in my garden this summer.  Wikipedia tells us it’s the 7th hottest chili del mundo.  The flavors are fresh and fruity, the heat intense from the first bite with a nice lingering burn.

Flavored sea salt is great.  I used Avanti lavender sea salt

Directions:

Grind the above in a blender to a smooth paste.  I like to let the chilies sit in the blender jar for an hour or so to infuse and macerate.  Then I blend again to break down the chilies even more.

In a small saucepan combine the chili sherry mix with the following:

Simmer uncovered over low heat for about an hour until reduced by half.  Stir in the following, and once everything is fully melted, turn off the heat and cool.  I store mine in a glass mason jar.

We’re in an organic food lovers renaissance right now.  Do choose organic grass fed dairy whenever possible.  Support the flavor & the changes in animal husbandry.  It’s a win win all around.  The same is true for agriculture.  Organic coconut oil is eco friendly while commercially farmed is likely not.  Let’s be proud of our footprints on a daily basis.  We vote w/ every dollar we spend.  We can be the change we wish to see on this beautiful blue green planet who is most truly our Mother Earth!

And now, some serving suggestions.  The possibilities are as HOT as the Fatalii Butter.

Most of the vegetables above are from the Tuesday evening Huntington Beach Farmers Market.  Support your local farmers.  Many of the farmers there use organic principles but are not certified due to certification costs.  Do you trust your farmer?  

Not pictured, but oh so amazing, would be a simple grilled cheese made w/ Avanti Fatalii Buttered 1000000+++ grain bread, buffalo mozzarella, wild arugula & avocado.  This butter is also perfect at the table as your extra HOT summertime butter to spread on cornbread, corn on the cob, muffins and more.  When you taste how it melts into warm banana bread, you will surely Freak OUT Fatalii.

Avanti Garden Gazpacho

A beautiful bowl of Avanti Garden Gazpacho :: Cool classic soup on a summer's day

Salt & pepper
To taste

Directions:

Combine all in a powerful blender and whiz until smooth and creamy.  If it’s too thick add a little more water.  Adjust seasonings and add more salt, pepper and vinegar if necessary.  You won’t really taste the fennel or arugula much, they blend into the fragrant bouquet of the married flavors, but they balance out the mix.  Chill well for several hours or over night.  Garnish w/ Matcha Aoli.  When you whip up a batch of Avanti Garden Salsa, plan on having Avanti Garden Gazpacho as well!  

NOTE:  You can use a good quality whole grain gluten free bread for this soup if desired.  Choose one that is preferably seeded and uses whole grain flours like millet, quinoa, legume and bean flours over tapioca and arrowroot.

Avanti Summer Gardener's Salsa :: Do It All In The Food Processor ::

In the heat of the summer every year we find out which of our crops are producers and which are duds.  This year I had to hand pollinate all of my eggplants, and the tomatoes, exotic heirloom varieties were dismal, yielding not much more than a crop of leaves and fungus.  The chili peppers, on the other hand, are fully cooperative.  I choose ‘prolific’ varietals which are mostly late season, so it’s gonna be HOT for the holidays in my kitchen.   This salsa responds to what ever is going gangbusters in your garden and can be fleshed out at the farmer’s market w/ those items that aren’t producing for you.  And if you’re not a gardener, no worries, the recipe is scaled to the way you find fresh organic summer produce at the green grocer or farm stand
Here's the completed Avanti Gardener's Salsa served w/ roasted multigrain polenta nuggets w/ quinoa, millet  & amaranth, fresh arugula & oregano & Meyer lemon garlic rouille
All ya need for this garden gem is a food processor.  Follow the steps below.  Adding the ingredients in the proper order is the key to texture success.

Add to the food processor and mince them down.

I like using a red and a green and then either a yellow or an orange one, depending upon the harvest.  Eat the rainbow.

I used a wee but powerful pequin pepper from Guadalajara.  It packs a strong bite, but the slap fades quickly, leaving you wanting more real soon.

Process all to a finely minced texture.  Turn out into a bowl and add

Stir well, add more salt and vinegar if needed.  Pack into clean glass wide mouth pint jars.  Makes about 5 pints.
