Avanti Garden Gazpacho

A beautiful bowl of Avanti Garden Gazpacho :: Cool classic soup on a summer's day

Amount
Measure
Ingredient
Prep Method
1
Pint

2
Slices
Whole grain seeded bread
Hearth loaf
1/3
Cup
Pepitas

½
Cup
Water

¼
Cup
Basil leaves

1
Cup
Arugula

¼
Teaspoon
Fennel seed

2
Tablespoons
Red wine vinegar

Salt & pepper
To taste

Directions:

Combine all in a powerful blender and whiz until smooth and creamy.  If it’s too thick add a little more water.  Adjust seasonings and add more salt, pepper and vinegar if necessary.  You won’t really taste the fennel or arugula much, they blend into the fragrant bouquet of the married flavors, but they balance out the mix.  Chill well for several hours or over night.  Garnish w/ Matcha Aoli.  When you whip up a batch of Avanti Garden Salsa, plan on having Avanti Garden Gazpacho as well!

NOTE:  You can use a good quality whole grain gluten free bread for this soup if desired.  Choose one that is preferably seeded and uses whole grain flours like millet, quinoa, legume and bean flours over tapioca and arrowroot.

Click the links for tofu, kombu and matcha to learn more about the health benefits of these power foods, and google the rest to see the power in all ingredients.  Eat Well // Live Well

Directions:
Bring 2 quarts water to a boil in a wide sauce pan.  Wipe the kombu seaweed w/ a damp cloth.  Rinse the tofu.  When the water boils, turn off the heat and gently lower in the kombu and tofu.  Cover and let poach for 10 mins.  You can use this water to begin a great broth.  Or if you are already making a Summer Garden Broth poach your tofu and kombu in the flavor mix.

Using a slotted spoon or spider, transfer the tofu and kombu to the Vitamix.  Add the rest of the ingredients and blend to a smooth texture.  Store in the fridge.  This piquant and rather bitter rouille is a great garnish to any and all rich foods.  Try it on Avanti Garden Gazpacho.  It pairs well w/ the fresh garden vegetable flavors of Avanti Summer Gardener's Salsa too.

You may wonder why there's gin in this sauce.  The aromatic, bitter & unctuous flavor of gin pairs well w/ the matcha and full bodied Meyer Lemon botanical flavors.  This aoli is not for everyone.  Foodies tantalized by exciting tongue tinglers will adore it!

NOTE:  Add 2 cups of the poaching liquid to the blender jar and whiz to clean out the sides.  Combine that w/ the remaining poaching liquid, and you have a flavorful light broth to use for making miso soup, or as a flavoring for cooking rice, beans or grains.
Here it adorns the dish it was designed for, Avanti Garden Gazpacho

NOTE: Learn more about the many benefits of Chia Seeds, PepitasMatcha  & Miso NOW!  Google any of the other ingredients to find out more about the amazing health benefits of food.
Chia seeds are low in calorie, high in fiber, protein, minerals and antioxidant nutrients, especially minerals like calcium, phosphorus & magnesium.  They plump up into a pleasing gooey texture when
soaked in water, tea or juice

Directions:

Combine all in as many glasses or jars as you wish to make.  The recipe above is the amount you put into EACH glass or pint jar.  The recipe makes about 1 full cup of pudding, but I use a pint jar in case I want to be generous w/ some of the ingredients.  Cover and refrigerate overnight.  This chia pudding is not too thick, nor too sweet.  It makes a great power breakfast.
Incorporate friendly probiotics and elements of the Master Cleanse for maintaining happy gut health

Along w/ the caffeine and green tea goodness from the matcha, you get a myriad of protein and essential oils from the seed mixture.  This concoction also contains elements from the Master Cleanse as well.
Matcha is also becoming more available here in the US.  It’s a tasty, somewhat bitter form of green tea
The living and natural probiotics in the cider vinegar and miso fortify the gut w/ friendly bacteria.  You’ll find you can’t wait to start the day w/ this energy powerhouse.
Vary the fruits and juices for maximum flavor and nutrition
If you like it thicker, use 3 Tablespoons of chia seed per glass.  You can make up enough for the week, varying the fruit and juices for flavor interest.  They keep in the fridge for up to a week.
Pepitas are loaded w/ complimentary micronutrients and add satisfying crunch
Now it's ready to cover and chill overnight.  If you use mason jars, just put on the lid.  If you're using glasses top w/ a plate, or cling wrap.
Into the fridge over night to plump up and get gooey
Next morning they are plumped up and ready to enjoy.  Garnish w/ some fresh berries or seeds and get ready to feel the energy transfer!
A fresh cool powerhouse breakfast right out of the fridge
It's a treat to start they day w/ fresh living foods, neither too sweet, too rich or too heavy.  Eat Clean the Avanti Natural Way!
Garnished and beautiful, it's time to break the fast & relight your fire!
