Trim any
brown or soft bits from the mushrooms.
Trim the stems if they are dark colored. Toss all ingredients together in an oven proof dish. Let marinate while you preheat the oven
to 375. Roast for 45 mins. Cool in the turned off oven. Remove from oven, toss well to combine

in the fridge the next morning.
They are ready for lunch or dinner that next day.

The possibilities are endless. They are great served hot, warm, room temperature or chilled. Add garlic or hot chilies to give even more depth of flavor. Superb on a pickle or charcuterie platter for entertaining the mushroom lovers among us. And a great way to identify those who do not. [Make a mental note to shun such 'people']
