Italian Sparkling Fruit Compote :: Chef Mark Cleveland @ Hungry Harvest ::

Servings: 8 to 12



So beautiful & so easy to make.  It lasts in the fridge for several days & just keeps getting better.  You won’t use the two full liters of soda right away, but I keep topping off the jar every time I serve up the compote w/ lots of juicy goodness.

Favorite Italian sparkling sodas




Prep out the fruit.  The easiest way to core apples and pears is to just cut around the core as shown in the photos.  The first cut takes off about half of the fruit and then work your way around.   


Slice the plums in half and twist.  Pull out the pit.  If they cling, cut the pit half in half again and use a sharp pairing knife to remove the pit.  I cut some of the grapes in half, but leave most whole.




Use a large glass wide mouth jar & load in the fruit.  It’s good to fill it nicely and even press down to mash the fruit a bit.  Fill with your favorite Italian sparkling sodas.  I used blood orange and white grapefruit.   


You can add herbs like mint or lemon balm too if you like.  I kept mine all fruit today.  Cover and chill for several hours




Optional additions and garnishes:

Fresh & dried fruits, fresh herbs, ice cream, honey, date or pomegranate molasses, sesame, chia seeds, etc




Today I used organic yellow mango, dried tart cherries, organic dried CA grown jujubes & organic fresh strawberries



When it’s time to serve, do it w/ panache.  Set every thing out & let folks build their own.   


I put fruit in the bottom of a fancy glass, add a scoop of ice cream, then more fruit, fresh sweet herbs, lotsa fruit infused soda, then top w/ honey or pomegranate molasses & a sprinkle of sesame seeds.  Serve w/ a spoon & be prepared for people wanting seconds!



While this is a satisfying sweet dessert, containing sugar in both the soda and ice cream, it has no added sugar, other than the whisper of honey or molasses on top.  You’ll find you can really taste the fruit when we reduce the over all sugar content.  Try this blended w/ more ice cream for a super milk shake!

Lady Clementine Smoothie :: Chef Mark Cleveland @ Hungry Harvest ::

This smoothie is ready in just a few minutes, is deliciously balanced without any extra ingredients, and can be embellished to create an exotic flavor masterpiece or a hearty complete breakfast or on the go meal.  It has just the right amount of kale

Kale leaves






Peel & core apples & pears.  Strip stem off kale leaves.  Discard or compost peels & cores.  Kale stems make a great addition to veggie broths.  Keep a bag in the freezer for soup time.  Or use them in the stock for the other recipe in this box.  Corn & Pepper Stew.   



Tear kale leaves into blender jar.  Add apples & pears, any other favorite fruits or berries you have on hand (today we had some extra strawbabies), and the optional sweeteners like

I add the peel of one or two Clementines to my smoothie for added zing along w/ the juice.  Add in any optional ingredients like

I love the flavor of cardamom with orange blossom water & the healthy fats & creamy texture of hemp seeds.  Cardamom is a natural mood elevator & has healing properties for our intestines.  Then add

and blend on high speed until nice and smooth.  Serve as is, or spike it w/ sparkling water (or Prosecco!), citrus zest, more seeds for a crunch, or your favorite yogurt for extra tang and protein.  




For today’s smoothie flavors I used ½ teaspoon cardamom, 2 teaspoons orange blossom water & 2 tablespoons hemp seed.  Look for exotic seasonings when you visit cultural markets.  Date & pomegranate molasses & orange and rose water are available at Middle East and Persian markets.  Check out the lovely offerings from alwadialakdar.  Everything tastes good in a smoothie.  Experiment wildly & share your flavors on Hungry Harvest social media!

RAD Purple Salad :: Chef Mark Cleveland @ Hungry Harvest ::

I like to stripe peel the cukes, leaving a little skin for flavor, but improving the texture & visual appeal.  If the seeds are small you can leave them in, or scoop them out easily w/ a spoon if desired.  I often scoop the tough seeds into a water pitcher for delish & refreshing cucumber water.

Pull off the pretty, well shaped outer leaves of the radicchio and arrange on a large platter.  Chiffonade the rest.  Pick and wash any edible petals or herbal garnishes you’d like to use.  Today we used rose geranium & African purple basil blossoms in addition to the green herbs.  


Put the radicchio into a large mixing bowl.  Add

Add any of the optional ingredients you desire.  Stir well.  If the radicchio flavor is too bitter for you add more pomegrante molasses, maple syrup or honey, and use a sweet citrus like a navel orange.  Arrange on top of the beautiful radicchio leaves & serve.  



This is a great dish to take to parties, brunches, pot lucks & picnics.  It’s stunningly beautiful and delicious w/ the bitter & sweet flavors of the radicchio & black berries.  If you use some of the exotic ingredients their perfume will start some fantastic conversations too.  Any leftovers make great pita sammies!
