Honey Dijon Brussels Sprouts w/ Cashews :: Chef Mark Cleveland @ Ready.Chef.GO! ::

























 

  

 

Microwave on high for 6 to 10 mins or 400 oven for 25 to 40 mins depending on tenderness preferences
Serves 2 to 4 as entrée or side dish

1 Pound Brussels Srpouts, halved, quartered or shredded
1 Shallot (about 1/2 cup sliced)
3/4 to 1 Cup Toasted Cashews
2 Tbs Dijon Mustard
Salt & Pepper
1/2 Cup Italian Dressing
(Opt) 1 Tbs EVOO

Add the Brussels sprouts to the bag along w/ the Dijon, salt & pepper.  Pile in the sliced shallot, then the cashews.  Add the Italian dressing & optional EVOO.  Seal the bag & shake to combine the flavorings.  I like to leave the sprouts, shallot & cashews in layers, for optimal cooking. 

REHEATING INSTRUCTIONS: Microwave on high for 6 to 10 mins (I prefer 8 mins) or roast in a 400 oven for 25 to 40 mins depending on how tender you prefer your Brussels sprouts.  Let rest for 3 mins before opening the bag.  Slide out onto a serving platter or bowl and toss well to combine all.  Serve as a main or side dish.  Toss w/ cooked pasta for a hearty meatless entrée.

Roasted Brussels Sprouts :: Chef Mark Cleveland @ Hungry Harvest ::




Difficulty: Easy

Time: 10 mins prep, 25 ~ 35 oven

Servings: 4 to 6



Satisfying HOT roasted Brussels are tamed by the sweetness of carrots, apples & white onions.  Served w/ a Roma Tomato Pesto

Roll cut or 1” dice

Peeled

Sweet marsala
Or OJ or broth

Rosemary

Set the oven to 550.  Get the Brussels sprout, carrots, onions, apple & whole garlic cloves into the oven right away.  


Add in salt & pepper, evoo, lime juice, marsala (or oj), rosemary if using and put into the top 2/3 of the hot oven uncovered.   



Set a timer for 25 mins while you prep the pesto.  When the timer goes off, stir and taste, add another 10 mins or so if you like your veggies more tender.

While the Brussels finish cooking dice the avocadoes & embellish w/ any flavors you like.  I added some smoked paprika, pepitas & black sesame seeds.  When the Brussels & carrots are crisp tender remove from the oven.  Serve topped w/ the pesto & the avocado garnish.  The three components are so tasty together. 




Naturally sweet & savory ingredients are well matched with each other on the same plate.  If an ingredient is something you don’t like just yet due to its natural bitterness, add less at the beginning and pair it w/ sweeter ingredients like we did here.  Tell us about your Hungry Harvest creations on social media.

Brussels Spuds :: Chef Mark Cleveland @ Hungry Harvest ::


In a medium covered saucepan bring to a low boil over medium heat.

Set a timer for 10 mins. Then add

Brussels sprouts
Cut in half

Remove from heat, and cool uncovered.  Cut potatoes into bite sized pieces.   

In a pyrex measuring cup combine

Or honey mustard

Butter

Black pepper

Chili powder
Or Italian seasoning

Sherry
Amontillado is great for this dish

Black sesame seeds


Warm the sauce to melt the butter in the oven or microwave.  Spread out the Brussels and spuds on a parchment lined baking sheet.  
Toss w/ the sauce and roast in a 375 oven for 25 to 35 mins depending on how you prefer your crusty char.
