Curly Sushi :: Chef Mark Cleveland @ Hungry Harvest ::

Get the entire gang involved in stuffing these fun & flavorful curly kale sushi rolls.  Cooked brown rice is readily available, as is cooked & seasoned sushi rice, often from local restaurants.  HARVEST HACK:> Cook beets easily in advance

Cook the beets ahead.  Wash, do not peel, cover w/ water in a medium saucepan.  Add a teaspoon salt, Cover, set over high heat & set a timer for 10 mins.  When the water boils, reduce heat to medium & set a timer for 25 mins. Turn off heat & let cool covered in the water.  I do this the night before or in the early morning.

Pull the ribs out of the kale leaves & add the Kale Marinade.  Massage the leaves and set aside to marinate while you prep out the vegetables & fruits.

You don’t need much for 5 rolls.

Stir the flavorings into the cooked brown or sushi rice.  I like to set everything out as a buffet and let everyone make roll their own.  It’s a colorful feast for the eyes.

Nori sheets



The curly top end of the leaf will end up being the top of the roll.  Lay in a sheet of nori if you’d like.  You can buy them in 3 X 4 in sheets.  Perfect size for Curly Sushi.  Scoop in a couple tablespoons of sushi rice in the middle of the leaf.  Arrange the long fruits & veggies toward the top of the leaf, sticking out the top a bit.  Curl the leaf around the sushi and if desired, poke a hole w/ a chop stick & secure the roll w/ a firm matchstick of juilienned carrot.



This is a great way to learn to love the flavors of sushi.  Kale & the briny sea flavor of nori seaweed pair together famously.  The crisp, crunchy, sweet and salty flavors of the fillings tumble together in harmony.  HARVEST PANTRY HACK :> Keep sunflower & sesame seeds on hand for flavor, nutrition & crunch.

Summer Garden & Farmer's Market Broth


For the flavor base.  Use produce grown in your garden or organic produce from the farmer’s market for this extra fresh treat.

Onion skins, red onion skins in particular carry a lot of create polyphenol antioxidants

The outer leaves of leeks

Tough celery stalks 

Garlic peels

Ginger peels

Parsley stems

Tough stems of greens like kale and collards

Sweet bell & chili pepper tops and seeds

Corn cobs

Seaweed

Citrus peels & rinds

Eggplant peels

Potato & yam peels

Tomato trimmings

Woody herbs like bay, thyme, lemon grass and lemon verbena

Miso

Cooking liquors such as dry vermouth, sherry, marsala, madiera, red or white wine

Directions:

Combine all in a stock pot.  Cover w/ about 3 inches of water.  Cover the pot and set over medium high heat.  Set a timer for 15 mins.  When the broth comes to a simmer, reduce heat and simmer gently, uncovered for 15 mins longer.  Don’t boil hard or you’ll get a stock that tastes like lawn clippings.  Turn off the heat and allow to cool to room temp.  You can compost the cooked vegetable left overs as long as you keep the ratio of yard waste up.  Don’t add too many cooked vegetables to your compost.  I compost w/ worms and they seem to do fine w/ some cooked vegetables from time to time. 

If you want to lightly poach something to heat it and cook it gently this broth does double duty.  In this batch I poached a block of organic firm tofu used to make Avanti Matcha Aoli.

Avanti Power Dashi \\ Flavors of Immune Defense //



Avanti Power Dashi supports roasted organic eggplant dengaku w/ garlic tomatoes & jalapeño
Pay attention to the care & feeding of your internal immune system.  There are microbes lurking all about.  Keep your wits about you w/ an arsenal of super food defenses to insure that the invading hoards remain at bay.

Dashi is the Mother Broth of Japan, loaded w/ umami, generally containing kombu seaweed & katsuobushi (dried bonito flakes) as the main ingredients.  Avanti Power Dashi is a vegetarian version enhanced w/ shiitake mushrooms and a cornucopia of optional ingredients too.  This open ended recipe encourages creativity in your kitchen. 

This is an immune boosting micro nutrient rich flavor powerhouse.  Always use the highest quality ingredients.  Always choose organic whenever possible.  Keep it somewhat simple.  There are a few essential ingredients.  The rest are optional.  Make it in many variations until you find two or three versions that entrance you the most.  Keep it seasonal and garden fresh as well.  Grow your own onions and garlic.

Combine the essential ingredients w/ your optional, power root and strong herb selections in a medium stock pot. Cover and put over medium low heat.  Set a timer for 15 mins.  When the mixture comes to a very low simmer, allow to barely simmer very gently, covered for 5 mins.  Turn off heat.  Replace cover and allow to fully cool.  If adding delicate fresh herbs, add them 20 mins after you’ve turned off the heat.  Replace cover and cool.

Once cool, there are three ways to go.  1) strain and use the powerful clear broth.  2) Pull out the herbs, lemon grass, bay leaves, lemon verbena etc. (anything fibrous or tough) and Vitamix the rest for a true power bisque. 3) Strain off the first power broth for a clear delight, then Vitamix the soft bits w/ some brewed herbal, green or genmai tea for an amazing soup & sauce base.
