Sour Pappy Yuzu Sea Salt Blend

Directions:

Thinly slice yuzu removing any seeds into half moon slices.  Combine all ingredients in a large glass bowl and sun dry for several days, stirring w/ a wooden or bamboo spoon once or twice a day.  Avoid metal and plastic utensils for curing salt blends.  When fully dry, pack into glass jars.  This fragrant sea salt is great for both delicate & hearty dishes.  Yuzu is one of the most fragrant of all citrus.
