Soup Smorgasbord :: Chef Mark Cleveland @ Hungry Harvest ::

Simply & quickly cooked Harvest vegetables are morphed into hearty hungry entrée soups of many colors all week long.  There are a lot of great organic soups on the market now.  We chose 3 & added protein garnishes for flavors galore!



Make your harvest broth while you prep out the vegetables.  Add the peels & tough stems to a covered saucepan.  Add in a quart of water or more, salt & pepper, cover & set over high heat for 10 mins.  When it boils, remove cover & reduce heat to med high.

Saute onions in evoo w/ black pepper for about 5 mins, add the garlic & toss for 2 more mins.

Add the salt, cauliflower, celery & optional fennel & sauté for 5 mins while you prep out the remaining vegetables.

Strain in the broth, add the beet stems (I slice those very thinly for best texture), green beans, broccolette, cover and simmer over med high heat for 10 to 15 mins until tender.

Add in the kale & the beet greens at the end and simmer for another 5 mins or until kale is as tender as you like.  I like my veggies to retain some bite, but others prefer them nicely braised.  It’s up to you.  Now the creativity begins.

I used organic boxed soups in 3 flavors.  Tomato Basil.  Pumpkin.  Portobello Mushroom.  Garnished w/ brown rice & black sesame seeds, sausage & fava beans.  Make soup a festive full entrée meal in a bowl.  Flavors abound!



GARNISHES:

Seeds, Nuts, Fresh herbs, Edible petals, etc.



Some studies show that trying new or not yet favorite vegetables in soups makes them more palatable.  If you’re into making your own soups from scratch these simply cooked tender vegetables would be great in a roasted chicken soup, organic bone broth & barley, and a hearty classic minestrone.

Golden Crunch Slaw :: Chef Mark Cleveland @ Hungry Harvest

Servings: about 3 quarts

Golden beets are scrumptious.  They are sweeter and less earthy than their red cousins.  I cook the beets ahead as I like to let them cool slowly in their liquid.  But you can cool them rapidly in cold water, or even peel and grate them raw.

Wash the beets, cut off the greens leaving about an inch of stems.  Remove the stems, reserve the greens for the slaw. Cover the beets with cool water in a small saucepan, add a pinch of salt, put a cover on the pan and set the pan over med high heat.  Set a timer for 15 mins.  Reduce heat to medium for 30 mins.  Turn off heat & cool for several hours or overnight.  Then rub off the skins.   


Save time by peeling and grating the beets raw if desired.

When ready to make the salad, shred the cabbage, core and slice the apples, slice the beet greens and toss in a large mixing bowl.  Grate in the peeled cooked or raw golden beets.  Stir in the grapefruit juice and zest.   


In a small skillet heat

Over medium heat for about 3 mins until the seeds and oil are fragrant.  Pour over the salad and stir well.   


Let the salad macerate for a few mins and serve.  It’s extra crunchy when you first make it.  And a little more tender the next day.  It’s great as a salad, but also makes a great slaw for tacos & burgers.  For those that prefer slightly sweet veggies and fruit for breakfast, this slaw would go well w/ the Hungry Harvest add on granola.


If you’re not a fan of vinegar, add more grapefruit juice or a splash of lime juice.  In addition to being the flavor seed in many rye breads, caraway seeds are loaded w/ micro nutrients, flavonoids and anti-oxidants.  They aid in digestion, are anti fungal and boost the immune system.
