Lettuce Wraps // Spicy or Not :: Chef Mark Cleveland @ Hungry Harvest ::




 
Use mild, medium or hot salsa as you wish.  If you want to serve the heat on the side, put out several good hot sauces like Sriracha, Thai chili paste, chili flakes, etc.  Or make a hot sauce rouille w/ yogurt or mayo or a combo of both.  Coconut yogurt & Sriracha is a Winner!  I used vegan chicken in my version.

Roasted Winter Squash with Kale

The umami flavors of soy sauce and toasted nuts create a pleasing richness to this hearty winter squash & kale dish.

Roast the squashes on a parchment or foil lined baking sheet at 425 for about an hour or until soft and skin is golden.  

 We roasted the squashes along w/ an eggplant for Easy Ganoosh.  All from the same Hungry Harvest box this week.

 Allow to cool completely.  I usually do the roasting the day before.  In a large skillet or wok, combine the following:

Sherry
Or orange juice
1 ½
Tablespoons
Soy sauce

Teaspoon
Black pepper

Teaspoons
Fresh minced ginger

4 inch piece
Citrus peel
Orange or grapefruit, optional

Bay leaf

HOT chili
Optional



Bring to a simmer over medium heat while you prep out the squash.   


Here's how easy it is to skin a squash.   


Cut in half lengthwise, scoop out seeds, then scoop the flesh into the skillet in large tablespoonfuls.  Allow to simmer in the sauce for about 5 mins, then add:

About 2 quarts trimmed



Wash the kale well, remove the stems and break the leaves into bite-sized pieces.  Fold in the kale and cook until just tender, about 5 mins more.



Garnish w/ Toasted Almonds

Toasted in a 350 oven for 10 to 15 mins, or in a dry stainless steel or cast iron skillet over a medium heat on the stove.

Popcorn Perfected


Crunchy & Delicious :: Bring on the movies
Every cook is at least part mad scientist.  And tinkering w/ popcorn methods is an obsession that can last a lifetime.  At this moment in time, I’m ready to say, that this recipe truly is tuned to perfection.  The results are crunchy, delicious and irresistible.

I use an induction burner w/ a heavy stainless steel 5 quart pot w/ a good fitting lid.  Put the coconut oil into the cold pot.  Top w/ the kernels.  Set the temp to 390 or 400 degrees depending on your unit.  Let ‘er rip.  The popcorn will take care of itself.

Meanwhile in a small saucepan combine the following flavorings AND set the oven to 350

Or favorite oil

Nutritional yeast

shoyu, tamari, namashoyu

Strongly brewed green tea**

Hot chili flakes

When the corn is fully popped, stir the flavorings into the pot.  Stir well.  Put the popcorn pot into the oven and turn it off.  When the pot is cool to the touch, your crunchy Popcorn Perfected is ready to devour.

*A note on oils.  All Avanti fans know that we only use healthy lipids.  Consider avocado oil, grapeseed oil, rice bran oil, sunflower oil or organic butter.  Feel free to infuse your oil w/ flavors such as chili, rosemary, garlic, lemon and more.

**A note on tea.  I use brown rice green tea, Genmai Cha, for most of my cooking needs.  The puffed brown rice adds the most engaging nutty flavor to dishes.  Use about 1 Tablespoon of tea in ¾ cup of water for this recipe.  You’ll only need 3 T of the brewed tea, but once you taste this popcorn, you’ll likely make batch after batch.  And left over tea can be thinned out w/ a little hot water for a nice tea break, added to smoothies, added to soup, etc. 

Switch up your liquids.  This popcorn is scrumptious if you substitute 3 T of good bourbon, Scotch, sherry, brandy, flavored vodka or your favorite libation in place of the tea.  Make sure to use a low flame to heat the flavorings if you’re using booze since you don’t want to set the mix on fire.
