Easiest Pickled Baby Peppers :: Fast Pickle HACK ::


When sweet and hot peppers are plentiful in the garden and farmers market at the end of the summer and into mid fall, make jar after jar of these ridiculously easy pickled peppers.

Sweet or HOT, pierced


Directions:

Start w/ a clean wide mouth quart jar.  Did you know you can buy BPA free plastic lids for your canning jars?  Wash the peppers well and pierce w/ a sharp paring knife, to allow the brine to get inside the pickle.  Fill the jar half full w/ peppers and add

Coconut Aminos
Or 1 Tsp Sugar

Orange Juice

Cup
Apple Cider Vinegar

Dry herb seasoning blend
Italian, Mexican, Herbs de Provance

Tablespoon
Sherry
Optional


Water




Top off w/ more peppers, pressing them into the jar.  I put the jar into a wide bowl to catch any overflow.  It’s ok if you crack a few.  They will soften as they pickle.  Add water to the jar to bring the liquid up to the neck.  Put the lid on and shake the jar well.  Let sit at room temperature for 24 to 48 hours.  Shake the jar twice a day.  Unscrew lightly to let the CO2 escape.  Store in the fridge.  These are great on everything.

Stuffed Peppers :: Chef Mark Cleveland @ Ready.Chef.GO! ::

 





















 

Microwave power level 7 for 6 mins or 400 oven for 20 to 30 mins.
Fills 4 to 6 bell pepper halves for one or two bags, depending on the size of the peppers

4 to 6 bell pepper halves
1 1/2 Cups Cooked Grains (I used a mix of barley, lentils, brown rice, amaranth, quinoa)
2 Cups Vegetables, diced (I used shallot, garlic, red bell & Anaheim peppers, butternut squash, chanterelle mushrooms)
(Opt) 1 Tbs Soy Sauce
(Opt) 2 Tbs Sherry
2 Tbs EVOO
Salt & Pepper to taste
1 Cup Cheese, diced

Saute the vegetables in the evoo w/ the sherry & soy sauce or salt & pepper to taste until just tender.  Combine w/ the cooked grain blend & diced cheeses.  Pack firmly into bell pepper halves & seal in Ready.Chef.GO! bags for retail sale.  Not only are these meatless & great for Lenten promotions, they can also be made gluten free, by omitting the barley & using only brown rice, quinoa, amaranth, lentils and other gluten free grains & legumes. 

REHEATING INSTRUCTIONS FOR CUSTOMERS:  Microwave at powder level 7 for 6 mins or heat in a 400 oven for 20 to 30 mins until cheese is bubbly.  Let rest for 2 mins before opening the bag. 

NOTE:  Ready.Chef.GO! bags allow for excellent texture in the microwave & fast high heat cooking in the oven.  The results are always succulent & tender.  You’ll taste the difference. 

POINT OF SALE DISPLAY:  Build your display with sauces to serve w/ the peppers, marinara, salsa, gravy, adobo, etc.  Choose Latin, Italian, Asian  themes and more.  For my photos I used a chunky adobo sauce with corn.  Add fresh grab and go salads, dressings & anti-pasta style appetizer platters, guacamole, chips, etc. and side dishes related to the theme.  Include desserts & beverages.  If using and promoting a packaged grain medley, display that product w/ the bagged peppers.

Santa Fe Yam & Bean Bowl :: Chef Mark Cleveland @ Hungry Harvest ::








Harvest Hero Laura Jauregui posted an enticing veggie laden yam taco photo in the Facebook Harvest Recipe Club.  It inspired the easy side dishes & the savory Santa Fe Yam & Bean Bowl recipes we feature this week. This is one of the most beautiful & easy buffets to layout for friends & family.  We used both our Summer Squash & Salsa & Easiest Pickled Onions in this layered flavor bowl.









Leftovers can be rolled into enchiladas, quesadillas or simply served w/ warm soft tortillas as a fast and easy taco.  Cook up a good half of your harvest early in the week, and spoon out flavor for days to come.

Reuben's Pizza :: Chef Mark Cleveland @ Hungry Harvest ::




Pizza loves all harvest veggies & some fruits too.  Harvest Hero Reuben shared his version.  We’ve topped our pizza w/ three different flavor combos.  Make your pizzas round & cook them on a pizza stone, or press them into a parchment lined baking sheet.  I used Easy Harvest Pizza Dough & Coconut Fruit Pickle & Easy Cheezy to top this pizza in three quadrants.
