Frozen Avocado HACK




For One Dozen Avocados

Tablespoon
White miso

Cider vinegar

1/4
Cup
Lime juice




EVOO or Coconut Oil Spray



Optional Additions: Favorite Spice Blends.  I use Avanti’s La Boca Es Un Carnival Mexican oregano spice blend, but try Italian, Thai, Mexi seasonings or Herbs de Provence. 



The natural probiotics in the miso and vinegar seem to keep the texture and color better.


Directions:



Mash the avocados with the flavoring ingredients.  Use a 1/4 c scoop onto oil sprayed parchment on a sheet pan.  Press into a disk, spray the top lightly.  Freeze.  Put into freezer bags once frozen. 



Use to make guac, dressings, salads, etc.

Harvest Burritos :: Chef Mark Cleveland @ Hungry Harvest ::

The great thing about creating a Mexican Fiesta Feast is that your Harvest vegetables can do double & triple duty.  I added some cooked white beans to my rice mix to fill the burritos

I like the 9” sprouted grain Ezekiel tortillas for my burritos.  Just the right size & great texture.  I use long veggies for easy in rolling & they look beautiful when you cut the burrito in half.   




I used simmered carrots, green peppers & green beans.  But all Harvest veggies are good in burritos. 







Heat the oven to 350.  Warm the tortilla over an open flame, or in a skillet set over low heat or in the oven briefly, just to soften it.  Mound some of the rice & bean mix in the center.  A generous half cup works, depending on the size of the tortilla.  Add cheese, then burrito veggies, then more cheese. 







Roll up as shown, tucking the sides in first, then rolling the top over.  Put the chili into the serving dish or casserole if making a bunch.  Top w/ the burritos.  Warm in the oven for 10 mins.  Add more cheese & melt for another 8 to 10 mins. 



Serve w/ any of the garnishes we’ve made for this Harvest Mexican Fiesta. 


If you have extra burritos they are microwave friendly and reheat well for work.  A well crafted burrito is a meal unto itself w/ grains, protein, vegetables & flavor.  Choosing the veggies & rolling up the burritos is a great project for the kids.

All Sorts of Dishes Flavored w/ Roasted Garlic

You've roasted your California grown garlic as we showed you in the Avanti Roasted Garlic blog, and now you're flush w/ flavor.  Now it's time to figure out what to make with it.  Let your culinary imagination rip.  The possibilities are endlessly delicious.
Let's start at the very beginning.  These deep golden roasted orbs can be squeezed into almost everything.  Let's take a tour of recent Avanti roasted garlic creations.
Focaccia pizzas are a natural.  Ancient grain Kamut crust rubbed w/ roasted garlic cloves and garlic oil and topped w/ herbs, organic cherry tomatoes, goat cheese and baby greens.  
The complimentary rich texture and sweet nature of avocado & roasted garlic cloves makes for an extra special guacamole.
Organic cherry tomatoes and shichimi finish the flavors.  We used Avanti Roasted Garlic Coconut Spread on the tortillas and crisped them up in a 375 oven.  
An extra exotic salsa verde.  The silky sweetness of roasted garlic plays against bitter dandelion greens, feisty cilantro & the mighty Bhut Jolokia HOT chili to stand up to the perfection of sake steamed golden beets w/ anise seed, black Hawaiian sea salt and coconut roasted garlic baby organic greens & shallot.  That's fancy food!
Zippity zing lime tomato dressed Yukon gold potatoes w/ roasted garlic, garlic oil and basil blossoms.
Avanti Ringo Rock Star apple HOT sauce brings the flavor to this crispy Korean noodle cake served w/ roasted garlic, citrus & golden beet summer herb gastrique
There is not a risotto, grain or bean dish that doesn't love some roasted garlic stirred in.  
This sweet and savory organic egg scramble has whole roasted garlic cloves in the egg mix.
And finally a crispy rice organic tofu stir fry.  Tofu loves roasted garlic.  It soaks up the flavor and their textures compliment each other mighty fine.
