Vegan Cheez Whiz :: Chef Mark Cleveland @ Ready.Chef.GO! ::













 






















Microwave power Level 6 for 4 mins or 400 oven for 15 to 20 mins
3 Cups (enough for two party buffet bowls)

1 Can (15 Ounce) Organic Butternut Squash or Pumpkin Puree (Or 2 Cups Cooked & Mashed Butternut Squash or Pumpkin)
1/4 Cup Fresh Lemon Juice
1 Tbs Cider Vinegar
1/3 Cup Nutritional Yeast
2 Tsp Dijon Mustard (Or Hot Chinese Mustard)
1/4 Tsp Turmeric
1/4 Tsp Onion Powder
1/4 Tsp Garlic Powder
1/2 Tsp Sea Salt
1/2 Cup Tahini (Or Sunflower, Almond or Cashew Butter)
(Opt) 1 Tbs EVOO
(Opt) 1/4 Tsp Chili flakes or Hot Sauce

Garnish: Sesame seeds, Paprika, Chili powder, EVOO

Combine all in a mixing bowl and use a potato masher to stir it all together.  You can do it all in the food processor too if you wish, but when using pureed butternut squash it really isn’t necessary.  Spoon into serving dishes that fit nicely in Ready.Chef.GO! bags, seal and microwave on power 6 for 4 mins.  The bag fluffs and steams the whiz for a superb texture.  When you see a little bit of golden brown around the edges, it’s done. 

The idea is not to recreate the exact flavor or texture of Cheez Whiz, but to tingle the taste buds with an unctuous warm dip and spread loaded w/ umami flavors.  I like the strong flavor of tahini here, but you can substitute other nut butters as you wish for a slightly sweeter taste.  You’ll find organic tahini now in most grocery stores, Whole Foods & Trader Joes.  Thin the Whiz out w/ non dairy milk or brewed green tea for a wonderful vegan cheez sauce for veggies or vegan Philly cheez steak sammies. 

REHEATING INSTRUCTIONS:  Microwave at power level 6 for 4 mins or heat in a 400 oven for 15 to 20 mins until just golden brown on the edges & fluffed in the center.  Let rest for 2 mins before opening the bag. 

NOTE:  Ready.Chef.GO! bags allow for excellent texture in the microwave & fast high heat cooking in the oven.  The results are always succulent & tender.  You’ll taste the difference. 

Serve with a wide variety of dippers (cucumbers, dragon fruit, sweet peppers, cherry tomatoes, carrots, etc.) crackers & flat breads.

Harvest Nachos :: Chef Mark Cleveland @ Hungry Harvest ::

Crispy tortilla chips are the base for a tantalizing mountain of nachos.  Load them up w/ as many veggies as you wish.  This is a good place to try some veggies you’re not too fond of quite yet (like mushrooms).  Everything is tasty on a chip.

With Chorizo or Soyrizo
Favorite Cheese Blend

I generally use two colors of chips, just for visual interest.  I used colorful sauted peppers & some cooked mushrooms along w/ soyrizo & white beans and of course cheese.  Set the oven to 350 and layer your nachos on an oven proof dish.


I put a light layer of cheese on the tortillas first, then vegetables, more cheese, more vegetables & then the chorizo bean mix on the top.  Remember chorizo is salty. 


Top w/ a light sprinkle of cheese for effect & pop into the oven for about 15 mins, just to warm the nachos & melt the cheese to a light golden brown.  I served mine on a table loaded w/ Hungry Harvest Mexican Fiesta fare.  They shared garnishes of avocado & cukes & sea salt radish slices. 







Invite friends over for this summer time feast.  Lay it all out on a Mexican blanket.  Add some warm tortillas & all these glorious dishes can share all the garnishes.  Maybe make some Harvest sangria from our recipe page & celebrate the longest days of the year!  ¡Que Viva Verduras!

Crema Spoon Bread

Twice baked crema spoon bread adorns roasted udon cake & sake simmered spring vegetables
This versatile one dish low and slow baked wonder is great served up fresh and hot from the oven on every buffet & brunch table and wonderful used in place of cheese or egg scramble in all sorts of dishes.  Feast your eyes on the photos.

Directions:
In a large bowl, whisk together the above ingredients.  Then whisk in the following:

Then stir in

Favorite cheeses
Diced

Any favorite Parmesan, white cheddar, aged gouda, gruyere, emmentaler, compte, and goat cheeses of all ilks, from chevre to hard goat cheeses.

Next fold in

This is a great place to use a good quality organic vegetable medley.  I prefer the ones that include corn, carrots, peas and maybe eda mame. 

Butter a ceramic or glass casserole dish or a 12” non stick skillet.  Spoon the mixture in and place into a cold oven.  Set the temperature to 325 and a timer for 45 mins.  After the first 45 mins top w/

Fresh minced herbs


Drizzle this mixture over the top.  It doesn’t need to cover fully or be spooned in.  It’s like a glaze.  I use fresh basil blossoms for the herbs, but any fresh fragrant herb blend will work nicely, oregano, chives, parsley, chervil, tarragon, sage, etc.

Return to the oven for 45 mins more.  It’s done when set, slightly golden around the edges and beginning to pull away from the sides.

Combine all glass bowl or two quart pyrex measuring cup.  Cover w/ a plate and allow to culture at room temperature for 24 to 48 hours until nicely thickened and beautifully fragrant.  Spoon into glass jars and refrigerate.
