Breakfast Sausage & Tot Bowl or Bag :: Chef Mark Cleveland @ Ready.Chef.GO! ::





































 

Microwave high for 2 1/2 mins or 400 oven or 12 to 15 mins
1 serving per bag

1 1/2 Cups Raw Vegetables (I used 1 Cup Red Kale & 1/2 Cup Yellow Bell Pepper)
1/3 Cup Salsa, BBQ, Gravy, Marinara, Alfredo, Pesto Etc.
7 Tater Tots
3 Mini Sausage Links
1/2 Cheese, cubes
1 1/2 Tbs EVOO
Salt & Pepper

Fresh Herbs for garnish

Cut the vegetables into bite sized pieces.  I cut the red kale & yellow bell pepper into thin strips.  Toss the veggies w/ salsa & salt & pepper.  Load directly into bag or into a disposable bowl.  Saute the sausages & tots in oil to brown slightly.  Top the veggies w/ the tots & sausages, then add the cheese.  Seal the bags. 

REHEATING INSTRUCTIONS: Microwave on high for 2 1/2 mins or heat in a 400 oven for 12 to 15 mins, until the cheese is nicely melted.  Let rest for 1 min before opening the bag.  Serve garnished w/ fresh herbs.

Brown Sugar BBQ Salmon :: Chef Mark Cleveland @ Ready.Chef.GO! ::





























 

450 Oven or Open BBQ Grill
2 Servings in one BBQ Grilling Bag

6 to 8 Ounces Salmon Fillet
1 1/2 to 2 Tbs Brown Sugar
1 Tbs Chili Powder or Favorite Spice Blend
Salt & Pepper
1 Tbs EVOO
1/2 Pound Green Beans, trimmed
1 Cup Carrots, sliced
1/3 Cup Italian Dressing

Citrus & Fresh Herbs for garnish

Mix the sugar & spice together & season w/ salt & pepper to taste.  Rub the salmon w/ a little EVOO & mix the spice blend w/ the sugar & salt & pepper to taste.  Press the sugar blend into the top side of the salmon & set aside.  Load the veggies, Italian dressing & remaining EVOO into the bag & shake to combine.  Top with brown sugar salmon & seal the bag. 

REHEATING INSTRUCTIONS: BBQ on an open grill foil side down, or roast in a 450 oven for 15 mins.  Let rest for 6 mins before opening the bag.  Garnish w/ fresh citrus & herbs.  Follow all instructions printed on the Ready.Chef.GO! BBQ bag.

POINT OF SALE DISPLAY:  Build your display with fresh citrus & herbs & a sign saying, “Garnish your Scallops w/ a Squeeze of Fresh Citrus & Herbs”  Add every BBQ side dish, potatoes, pasta salads, cole slaw, fresh fruits, salads, rolls, appetizers, beer, wine, sodas, punch, tailgate favorites, etc.  BBQ condiments, mustard, BBQ sauce, ranch, etc.  Add Italian dressings w/ precut green & vegetable salads & salad & vegetable platters.  Desserts, ice creams, popsicles, ice cream sammies, etc.

Honey Dijon Brussels Sprouts w/ Cashews :: Chef Mark Cleveland @ Ready.Chef.GO! ::

























 

  

 

Microwave on high for 6 to 10 mins or 400 oven for 25 to 40 mins depending on tenderness preferences
Serves 2 to 4 as entrée or side dish

1 Pound Brussels Srpouts, halved, quartered or shredded
1 Shallot (about 1/2 cup sliced)
3/4 to 1 Cup Toasted Cashews
2 Tbs Dijon Mustard
Salt & Pepper
1/2 Cup Italian Dressing
(Opt) 1 Tbs EVOO

Add the Brussels sprouts to the bag along w/ the Dijon, salt & pepper.  Pile in the sliced shallot, then the cashews.  Add the Italian dressing & optional EVOO.  Seal the bag & shake to combine the flavorings.  I like to leave the sprouts, shallot & cashews in layers, for optimal cooking. 

REHEATING INSTRUCTIONS: Microwave on high for 6 to 10 mins (I prefer 8 mins) or roast in a 400 oven for 25 to 40 mins depending on how tender you prefer your Brussels sprouts.  Let rest for 3 mins before opening the bag.  Slide out onto a serving platter or bowl and toss well to combine all.  Serve as a main or side dish.  Toss w/ cooked pasta for a hearty meatless entrée.

Black Pepper Scallops w/ Corn & Peas :: Chef Mark Cleveland @ Ready.Chef.Go! ::





























Microwave power level 8 for 6 mins or 400 oven for 20 to 25 mins
Serves 2 per bag

6 Ounces Scallops
3/4 Cup Corn Kernels
1/2 Cup Peas
2 Cups Grain Medley, pre cooked
1/3 Cup Italian Dressing
1 Tbs EVOO
Salt & Pepper

Citrus & Fresh Herbs for garnish

Coat the scallops lightly in EVOO & sprinkle the top w/ black pepper.  Set aside.  Add the remaining EVOO to the rest of the ingredients and stir well.  Spread the corn & grain mix in the bag.  Top w/ the black pepper scallops.  Seal the bags. 

REHEATING INSTRUCTIONS:  Microwave at powder level 8 for 6 mins or heat in a 400 oven for 20 to 25 mins, until the grains are hot & the scallops are just cooked through.  Let rest for 5 mins before opening the bag.  Serve garnished w/ citrus wedges.  The lower power level in the microwave makes for perfectly cooked seafood.
