Simply Perfect Roasted Mushrooms

Mushroom lovers can't get enough of the delish fungus.  And this recipe makes prep and cooking as easy as can be.  Five ingredients in all.  Everything except the 'shrooms is a pantry ingredient.  So when your eyes spy the woodland goodness at peak freshness at the produce market, you can prep these lovelies out in no time flat.  They last well in the fridge too.  Slow roasted and marinated, they increase in flavor as they cure in the fridge.  


Simply Perfect Roasted Mushrooms

Large button or crimini mushrooms

Cream sherry

Mushroom soy sauce

Aged balsamic

Black pepper


Trim any brown or soft bits from the mushrooms.  Trim the stems if they are dark colored.  Toss all ingredients together in an oven proof dish.  Let marinate while you preheat the oven to 375.  Roast for 45 mins.  Cool in the turned off oven.  Remove from oven, toss well to combine in the juice.  This is a great recipe to make at night.  Put them in the fridge the next morning.  They are ready for lunch or dinner that next day.

Ready for the oven.  They will be done by morning.  Remember to turn the oven OFF after 45 mins and let them steep and cool in the turned off oven overnight.
Roasted to perfection.  
The possibilities are endless.  They are great served hot, warm, room temperature or chilled.  Add garlic or hot chilies to give even more depth of flavor.  Superb on a pickle or charcuterie platter for entertaining the mushroom lovers among us.  And a great way to identify those who do not. [Make a mental note to shun such 'people']
